Snails were introduced as a food into the UK by the Romans. 2000 years later, Somerset became the home of the local delicacy – Mendip Wallfish. Having fallen out of popularity, Lyn Paxman – founder of Somerset Escargot is on a mission to revive this high protein, sustainable, and versatile food.
